Few months ago, our team spent the day at one of our local ranch partners here in Montana. We walked the pastures, stood beside the herd, and talked with the ranchers who raise our beef — because before a steak ever reaches your table at Mountain Prime, it begins with the people who raise it. The difference between a good steak and an unforgettable one starts long before it ever sees our dry-aging room.
Quality Isn’t Ordered. It’s Earned.
Most guests picture a steakhouse as the finished plate — a beautifully seared steak, a glass of wine, a great evening. What they rarely see is everything that happens months earlier.
We visit ranches because we believe exceptional beef starts with:

Why Prime Matters
Not all beef is created equal. Only a small percentage of beef earns the USDA Prime grade, thanks to superior marbling — the fine streaks of intramuscular fat that melt slowly as it cooks, creating the tenderness, juiciness, and rich flavor steak lovers chase.
At Mountain Prime, we don’t settle for average. Our goal is simple: source the finest Prime beef we can find, then make it even better through our in-house dry-aging program. Every steak is chosen with intention, because our guests can taste the difference.
The Search Never Stops
Finding great beef isn’t a one-time decision — it’s an ongoing pursuit. We’re constantly visiting ranches, meeting producers, comparing genetics, and tasting product in search of quality that earns a place on our menu.
Whether it’s Prime beef or authentic Wagyu, we believe our guests deserve the best Montana — and the world — has to offer. That means asking hard questions, inspecting every step, and never accepting “good enough.”
Dry-Aged Bison Is Coming
One of the highlights of this visit was spending time around Montana’s bison herds. Leaner than traditional beef, naturally rich in iron and protein, with a deep, slightly sweet flavor, bison is already one of North America’s most remarkable meats.
We’re taking it a step further. Instead of serving ordinary bison, we’re developing our own dry-aged Montana bison program. Dry-aging concentrates flavor and improves tenderness, creating an eating experience most people have never tried.
